Ingredients

Chicken
  • 2 boneless skinless chicken breasts cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 2 teaspoons salt
  • 1 teaspoon white pepper
  • 3 eggs
  • 2 to 4 cups vegetable oil for frying
Sauce
  • 3/4 cup water
  • 1/2 cup honey
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/8 cup rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon ground ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
Garnish
  • 2 tablespoons sesame seeds
  • 1/4 cup green onions sliced (optional)

Instructions

    Cup of Yum
  1. Slice the 2 boneless skinless chicken breasts into bite-sized pieces.
  2. In a medium bowl, whisk together 1/2 cup all-purpose flour, 2 tablespoons cornstarch, 2 teaspoons salt and 1 teaspoon white pepper. In a separate bowl, whisk 3 eggs.
  3. Dip each piece of chicken into the egg mixture, then dredge in the flour mixture until fully coated. Set aside on a tray or plate.
  4. In a large pot or deep saucepan, pour in 2 to 4 cups vegetable oil, enough to reach about 2 inches deep. Heat the oil to 350°F (177°C).
  5. Working in small batches, fry the coated chicken pieces for 3 to 4 minutes, or until golden brown and cooked through. Remove with a slotted spoon and drain on a paper towel-lined plate.
  6. While the chicken is frying, in a bowl whisk together 3/4 cup water, 1/2 cup honey, 1/4 cup ketchup, 1/4 cup brown sugar, 1/8 cup rice vinegar, 2 tablespoons soy sauce, 2 tablespoons hoisin sauce, 1 tablespoon cornstarch and 1 teaspoon ground ginger. Set aside.
  7. In a large skillet over medium-high heat, heat 1 tablespoon sesame oil with 1 tablespoon minced garlic until fragrant and lightly golden, about 1 minute.
  8. Pour in the sauce mixture and bring to a simmer. Cook for 3 to 4 minutes, stirring often, until the sauce thickens.
  9. Add the fried chicken to the skillet and toss to coat in the sauce. Sprinkle with 2 tablespoons sesame seeds and cook for 1 more minute to heat through.
  10. Serve immediately. Garnish with 1/4 cup green onions, if using.

Notes

  • Serving Suggestion: Served over rice and garnished with green onions. Sauce may be made before hand and stored in fridge for up to a week.
