Tamago Kake Gohan

Ingredients

  • ½ cup Japanese short-grain rice
  • 1 raw egg
Toppings (optional)
  • black sesame seeds
  • beni shōga (pickled ginger)
  • soya sauce
  • edamame
  • Furikake
  • Scallion stalk
  • Tsukemono (Japanese pickled vegetables)
  • Seaweed flakes
  • katsuobushi (skipjack flakes)
  • kombu
  • Tarako (salted cod roe)
  • mentaiko (tarako seasoned with peppers)

Instructions

  1. Immerse the rice in a container generously filled with cold water and rub it between both hands for 2 minutes then drain it.
  2. Repeat the same operation 5 times or more, or until the water is clear.
  3. Cook rice by absorption, normally in a rice cooker or Dutch oven, according to package directions.
  4. When the rice is cooked, fluff it with chopsticks, then, using a spatula, transfer it to a serving bowl.
  5. Crack the egg over the rice. Use the whole egg or just the yolk, depending on taste.
  6. Serve as is or with 2 or 3 toppings.
