- ½ cup Japanese short-grain rice
- 1 raw egg
Toppings (optional)
- black sesame seeds
- beni shōga (pickled ginger)
- soya sauce
- edamame
- Furikake
- Scallion stalk
- Tsukemono (Japanese pickled vegetables)
- Seaweed flakes
- katsuobushi (skipjack flakes)
- kombu
- Tarako (salted cod roe)
- mentaiko (tarako seasoned with peppers)
Instructions
- Immerse the rice in a container generously filled with cold water and rub it between both hands for 2 minutes then drain it.
- Repeat the same operation 5 times or more, or until the water is clear.
- Cook rice by absorption, normally in a rice cooker or Dutch oven, according to package directions.
- When the rice is cooked, fluff it with chopsticks, then, using a spatula, transfer it to a serving bowl.
- Crack the egg over the rice. Use the whole egg or just the yolk, depending on taste.
- Serve as is or with 2 or 3 toppings.
