Tandoori Chicken

Juicy Tandoori chicken baked in the oven is a delicious, easy recipe perfect for dinner served with naan bread, rice and cucumber salad.

Ingredients

  • 1 lb (500g) boneless chicken thighs
  • 1 cup PLAIN yogurt
  • 3 garlic cloves crushed
  • 2 tsp crushed ginger
  • 2 tbsp lemon juice
  • 1 tbsp garam masala
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp Turmeric
  • 1 tsp ground cardamom
  • ½ tsp chilli powder
  • 1 tsp salt
  • 1 tsp black pepper

  1. Combine all the marinade ingredients together and add the chicken.
  2. Allow to marinade for at least 30 minutes up to 12 hours covered in the fridge.
  3. Preheat the oven and the broiler (oven grill) to its hottest temperature. This is the best way to emulate a traditional Tandoor oven used in Indian restaurants.
  4. Place marinated chicken, skin-side up, on a wire rack set over a rimmed baking tray or sheet pan lined with aluminum foil.
  5. Place the chicken in the oven and allow to bake and broil for 20-30 minutes or until the chicken is starting to char and is cooked through.
  6. Remove from the oven and allow to rest for 5 minutes before serving.
