Tarragon Sauce Recipe

Ingredients

  • 3 tablespoons butter divided
  • 1 shallot minced
  • ½ cup white wine
  • 1 cup demi glace
  • 1 tablespoon tarragon chopped
  • salt to taste
  • black pepper to taste

Instructions

  1. Melt 2 tablespoons of the butter in a saucepan and sauté the shallot for approximately 2 minutes (or until transparent).
  2. Deglaze the pan with the wine and reduce for 2-3 minutes.
  3. Add demi glace, stir and simmer until the sauce is thick enough to coat a spoon.
  4. Add the tarragon and finish with the remaining tablespoon of butter.
  5. Season to taste with salt pepper and serve.
