- 5 eggs
- 1¼ cup caster sugar
- 2½ cups ground almonds
- 1 lemon (zest)
- 1 teaspoon cinnamon
- icing sugar (for garnish)
- butter (for the pie dish)

Instructions
- Preheat the oven to 350 F (175 ° C).
- Place the caster sugar and ground almonds into the bowl of a food processor and mix them together.
- Add the eggs one by one, beating everything together at high speed until a fine-textured batter is obtained.
- Add the lemon zest and cinnamon and mix everything together.
- Butter and flour a 9 inch ( 22 cm) deep pie dish.
- Pour the batter into the mold and bake at 355 F (180 ° C) until cooked and lightly browned, about 30 minutes.
- To tell if the cake is done, prick it with a wooden skewer, and if it comes out clean, the cake is done, if not, continue cooking for a few minutes.
- Take the cake out of the oven and let it cool.
- To decorate the cake, place the Santiago Cross template on it and sprinkle it with icing sugar. Carefully remove the template, so that the silhouette of the cross remains.
