Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup warm water
  • 16 ounces semi-solid white cheese, cut into 1/2-inch thick sticks
  • vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine flour, salt, and baking powder.
  2. Incorporate the egg and melted butter into the dry ingredients.
  3. Gradually add warm water and knead the mixture until a smooth dough forms.
  4. Cover the dough and let it rest for 10 minutes.
  5. Roll out the dough on a floured surface to 1/4-inch thickness and cut into strips.
  6. Wrap each cheese stick with a strip of dough, sealing the edges well.
  7. Heat oil in a deep fryer or large pot to 350°F.
  8. Fry the tequeños in batches until golden brown, then drain on paper towels.
