Tequila Lime Carne Asada Skewers

Marinated skirt steak is grilled to perfection for these Tequila Lime Carne Asada Skewers. This tender, grilled meat is full of authentic Mexican flavor.

Ingredients

  • 3 limes juiced
  • 3 ounces tequila
  • ¼ cup  melted butter
  • 4 cloves garlic minced
  • 1 Jalapeño minced
  • 1 cup chopped fresh cilantro
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1/4 teaspoon chili powder
  • 1 teaspoon lime zest
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 pound skirt or flank steak

Instructions

  1. In a gallon size resealable bag, combine lime juice, tequila, butter, garlic, jalapeno, and cilantro.
  2. Seal bag and squeeze it around in the bag to combine.
  3. In a small bowl combine salt, pepper, chili powder, lime zest, garlic powder, and onion powder.
  4. Sprinkle half of the dry ingredients over the skirt steak and rub.
  5. Place skirt steak into the bag.
  6. Seal and make sure all the meat is coated in the marinade. Refrigerate for at least 2 hours, or overnight.
  7. Remove the skirt steak from the marinade, and discard excess marinade.
  8. Cut meat it into thin strips and thread beef on wooden skewers.
  9. Sprinkle remaining dry seasoning on meat and bring meat to room temperature.
  10. Heat an outdoor grill to medium-high heat.
  11. Grill for 4 to 5 minutes per side.

Notes

  • Serve these with Chile de Arbol Salsa - one of my favorite salsas combined with grilled beef.
