Teriyaki Chicken Stir Fry Recipe

Teriyaki chicken stir fry with an easy homemade sauce. Use frozen or fresh vegetables and toss with cashews for an easy 20 minute meal.

Ingredients

  • 1- 1 ½ pounds chicken thigh skinless and boneless cut into 1” cubes, or 4 pieces
  • 2 cups vegetable mix stir fry, frozen or fresh
  • ½ cup cashews
  • 1 Tablespoon avocado oil or canola oil
Teriyaki Sauce
  • 1/4 cup water
  • 1/4 cup soy sauce low-sodium, or alternative
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar or sugar free alternative
  • 1 tablespoon sesame oil
  • 2 teaspoons sriracha hot sauce
  • 2 cloves garlic minced, fresh
  • 1 teaspoon ground ginger
  • 1 Tablespoon cornstarch optional
Garnish
  • scallions sliced
  • sesame seeds

Instructions

  1. In a small mixing bowl whisk together water, soy sauce, rice vinegar, brown sugar, sesame oil, Sriracha hot sauce, garlic and ginger. Set aside.
  2. Heat a large stir fry skillet over medium high heat.
  3. Add in oil and chicken.
  4. Stir fry until chicken is mostly cooked.
  5. Add in vegetables and cook until vegetables are heated through and fork tender, about 3-4 minutes for frozen and 5-7 minutes for fresh vegetables; and internal temperature of the chicken reaches 165 degrees F. Add cashews (optional).
  6. Add prepared teriyaki sauce and fold into vegetables and chicken until all ingredients are coated and warm.
  7. To thicken sauce (optional), mix one tablespoon of cornstarch with one tablespoons of water until smooth. Push stir fry to the side of the pan and whisk slurry (cornstarch mix) into the sauce. Fold into all ingredients and heat until it reaches your desired consistency.
