Tex-Mex Taco Hummus Toast
Hummus toast is the new breakfast of champions! This healthy open-faced hummus sandwich features tasty taco hummus and fresh pico de gallo topped with a fried egg to seal the deal!
Ingredients
- 1 lice whole grain bread
- 2-3 TBSP hummus
- 2-3 TBSP Pico de Gallo or fresh salsa (see below)
- 1 egg large
TASTY TOPPINGS
- green onion chopped
- red pepper flakes crushed
- black pepper freshly ground
- hot sauce
- salt sea salt
MAKE-AHEAD PICO DE GALLO
- 2 cups Roma tomato diced
- 1 cup onion white, diced
- 1-2 jalapeno pepper minced
- ¼ cup cilantro chopped, fresh
- 1 lime juiced
- ¼ tsp salt
- ⅛ tsp black pepper
Instructions
- For the pico de gallo, simply combine the ingredients above. Keep in a lidded container in the fridge for topping your morning toast and all your snacking needs! You may also use your favorite salsa in its place.
- Cook egg via your favorite method. I went with fried sunny side up egg but hard boiled, soft boiled, and scrambled are all tasty options!
- Spread toasted bread with a few tablespoons of taco hummus and top it off with your cooked egg. Lastly, add your pico de Gallo and garnish with your favorite toppings from the list above. Commence faceplant!
