Texas Caviar [Avocado Corn and Bean Salad]
Texas Caviar is a vibrant avocado, corn, and bean salad combining pinto and black beans, chickpeas, fresh corn, diced avocado, red onion, tomato, and cilantro. Tossed with lemon or lime juice and seasoned with salt, this salad offers a fresh, tangy, and creamy blend of textures. It can be served chilled or at room temperature and improves in flavor when allowed to marinate.
Ingredients
- 1 pinto beans drained and rinsed
- 1 black beans drained and rinsed
- 1 chickpeas drained and rinsed
- 1 corn drained and rinsed, unsalted
- 1 large avocado diced
- ½ cup red onion diced
- ½ cup tomato diced
- ¼ cup cilantro chopped
- 3 to 4 tablespoons lemon juice or lime juice, about 1 small lemon or lime
- salt to taste
Instructions
- In a large bowl, mix together all the ingredients. The salad can be servedchilled or at room temperature.
Notes
- Allow the salad to marinate so flavors meld and onion mellow.
- Soaking diced onion in ice water for 10 minutes reduces its sharpness without long marination.
- Preparing beans from dry can save money; cook in batches and freeze extras for easy use.
