Texas Caviar, Good Luck Black-Eyed Pea Dip!

This simple Texas caviar recipe is sure to be a hit at new year and any celebratory gathering! Addictive and flavorful knock your boots off dip. Serve with tortilla chips or scoop up with celery sticks.

Ingredients

  • 1 1/2 pounds tomatoes seeded and diced
  • 2 scallions sliced
  • 2 tablespoons diced green chilies
  • 1 medium jalapeño seeded and diced
  • 2 tablespoon cilantro chopped
  • 2 Tablespoons white wine vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/8 teaspoon black pepper
  • 1 can 15 ounce black eyed peas, drained and rinsed
  • scoop tortilla or corn chips

Instructions

  1. Mix all ingredients in a large bowl. Best if made 1 day in advance to let flavors blend. Serve with scoop tortilla or corn chips.
