Ingredients
- 1 1/2 pounds tomatoes seeded and diced
- 2 scallions sliced
- 2 tablespoons diced green chilies
- 1 medium jalapeño seeded and diced
- 2 tablespoon cilantro chopped
- 2 Tablespoons white wine vinegar
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon cumin
- 1/8 teaspoon black pepper
- 1 can 15 ounce black eyed peas, drained and rinsed
- scoop tortilla or corn chips
Instructions
- Mix all ingredients in a large bowl. Best if made 1 day in advance to let flavors blend. Serve with scoop tortilla or corn chips.
