Thai Bamboo Soup Recipe (Keng No Mai)

Ingredients

FOR MAKING THE BAMBOO SOUP
  • 9 ounces fresh bamboo
  • 1/4 cup glutinous rice
  • 0.5 ounces yanang
  • 3.5 cups water
  • 3 Chilies
  • 2.5 tablespoons fermented fish sauce
  • 1 teaspoon MSG
  • 1.5 teaspoon salt
  • flavor seasoning
  • 3.5 ounces sponge gourd substitutable with zucchini
  • 1 ounce rice paddy herb
  • 3.5 ounces mushrooms see notes
FOR BLANCHING THE BAMBOO
  • water enough water to cover the fresh bamboo shoots
  • bamboo shoots
  • 2 tablespoons white sugar

Instructions

BLANCH FRESH BAMBOO SHOOTS

  1. Heat a pot or large pan with water over medium heat. Add fresh bamboo shoots and white sugar, let boil for 20 minutes. Then drain water, leaving the bamboo shoots in the pot.
  2. (If you're using canned bamboo shoots, you can skip this, instead simply wash them)
MAKE THE SOUP
  1. In a blender, mix glutinous rice, yanang, and water into a fine substance.
  2. Use a mortar and pestle to pound the chilies.
  3. Place the pot with bamboo shoots over medium heat, add the mixture of step 2 and crushed chilies. When boiling, add all sauces and seasonings while continuously stirring (fermented fish sauce, MSG, salt, flavor seasoning).
  4. It's important to keep stirring at all times to prevent the glutinous rice from sticking to the pot, which will cause it to burn.
  5. When the soup comes back to a boil, add sponge gourd, letting the soup boil for 2 minutes. Then add mushrooms, cook for another minute and add the rice paddy herbs. Remove from heat and serve immediately.

Notes

  • Use the nutrition card in this recipe as a guideline.
  • I used enoki mushrooms, but you can use any Asian mushroom that can be cooked and eaten.
  • Be warned, Isan food is incredibly flavorful. This recipe is not for those who are new to the world of Thai flavors.
