Ingredients
- 2 chicken breasts cooked and shredded, see notes
- 1/2 cup cashews
- 1/2 cup cucumber diced
- 1/2 cup carrots shredded
- 1/4 cup golden raisins
DRESSING:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 teaspoons sugar
- 1/4 teaspoon salt
- 2 teaspoons curry powder
Instructions
- Mix together all the dressing ingredients in a large bowl. Set aside.
- Combine chicken, cucumbers, carrots, cashews, and raisins in a large bowl.
- Add the dressing and mix until everything is coated. Chill in the fridge for at least one hour.
