Ingredients

  • 2 English cucumber thinly sliced, medium
  • 1/4 cup red onion thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons granulated sugar
  • 1 tablespoon lime juice fresh
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup peanuts chopped, roasted
  • 1/4 cup cilantro chopped, fresh

Instructions

  1. In a small bowl, whisk together rice vinegar, sugar, lime juice, sesame oil, salt, and red pepper flakes until the sugar dissolves.
  2. Place the sliced cucumbers and red onions in a large bowl. Pour the dressing over the vegetables and toss to coat evenly.
  3. Garnish the salad with chopped roasted peanuts and fresh cilantro before serving.
