Thai Cucumber Salad with Peanuts

Ingredients

  • 4 tsp fresh lime juice
  • 1 tsp fish sauce
  • 1 tsp sugar
  • 1 Thai chili sliced thinly
  • 1 clove of garlic minced
  • 3 tsp canola oil
  • 1 English cucumber halved lengthwise, seeded and sliced 1/4 inch thick
  • ¼ small red onion sliced thinly
  • ⅓ cup fresh cilantro chopped
  • 2-3 tbsp roasted peanuts
  • Pinch of sea salt

Instructions

  1. Combine the lime juice, fish sauce, sugar, chilies, garlic, and oil in a small bowl. Whisk until well combined; set aside to allow flavors to mingle.
  2. When ready to serve the salad, add the cucumber, sliced onion, cilantro, peanuts, and a pinch of salt to a large bowl.
  3. Whisk the dressing well before pouring it on top of the cucumber mixture.
  4. Mix with a spoon until well combined. Serve immediately. Enjoy.
