Thai Grilled Beef Salad

Ingredients

  • 1 lb steak you can use flank, rib-eye, or sirloin
  • 1 tablespoon fish sauce
  • 3 cloves garlic minced
  • 1 shallot minced, small
  • 1 tablespoon lime juice
  • 1 Thai chili optional, red
Dressing:
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar
  • ½ shallot finely minced, small
  • 1 clove garlic finely minced
  • 1 Thai chili optional, red
  • 2 tablespoon lime juice
  • 1 teaspoon granulated sugar or to taste
Salad:
  • 4 C mixed greens
  • 1 English cucumber sliced
  • 1 C cherry tomatoes sliced, or grape tomatoes
  • ¼ red onion thinly sliced
  • mint
  • cilantro
  • Thai basil torn, handful fresh

Instructions

Marinate the steak:
    Cup of Yum
  1. In a bowl, combine steak with fish sauce, brown sugar, garlic, shallot, lime juice, and chili (if using).
  2. Mix well, rubbing the marinade into the meat and set it in the fridge to marinate for 30 minutes.
  3. Remove the steak from the fridge.
  4. Pat dry.
Cook the steak:
  1. Heat a frying pan or cast iron skillet over high heat.
  2. Add the steak to the pan and sear, without touching the meat for 5 minutes.
  3. Flip the steak over and sear on the other side for another 5 minutes, until medium rare (or your preferred doneness).
  4. Remove from the pan and transfer to a cutting board. Cover and let the steak rest for 5 minutes.
  5. Slice the steak thinly against the grain.
Assemble:
  1. In a bowl, whisk together fish sauce, shallot, garlic, chili (if using), lime juice and sugar.
  2. Give it a taste and adjust the seasoning to your taste.
  3. Lightly toss in mixed greens, chopped tomatoes, sliced cucumber, red onion and Thai basil into the bowl.
  4. Serve the salad greens onto a plate and add the sliced steak.
  5. Drizzle with extra dressing and a squeeze of lime.
  6. Serve immediately.
