Thai Lettuce Wraps

A delicious Asian treat using butter lettuce as nature's tortilla.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 2 cloves garlic minced
  • 1/2 cup onion diced
  • 1 tablespoon fresh ginger minced
  • 1 red bell pepper diced
  • 1 cup shredded carrots
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • 1 head butter lettuce leaves separated

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground chicken and cook until no longer pink, breaking it up with a wooden spoon, about 5-7 minutes.
  2. Add garlic, onion, and ginger to the skillet. Cook until fragrant and onions are translucent, about 2-3 minutes.
  3. Add red bell pepper and shredded carrots. Cook for another 3-4 minutes until vegetables are tender.
  4. In a small bowl, mix together soy sauce, hoisin sauce, rice vinegar, and honey. Pour the sauce into the skillet and stir to coat the chicken and vegetables evenly. Cook for an additional 2 minutes.
  5. Remove from heat and stir in chopped cilantro and peanuts.
  6. To serve, spoon the chicken mixture into the butter lettuce leaves. Enjoy!
