Ingredients

Meatball Recipe:
  • 3 lices bread
  • 1/3 cup milk whole
  • 1/2 yellow onion , minced
  • 3 tablespoons butter divided, unsalted
  • 2 pounds ground beef , (80/20)
  • 2 large egg
  • 3 cloves garlic , minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper cracked
  • 1 teaspoon Worcestershire sauce
Peanut butter Sauce:
  • 1/2 can coconut milk , 7 ounces
  • 1/3 cup peanut butter creamy
  • 2 tablespoons soy sauce low-sodium
  • 2 tablespoons honey
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon lime juice
  • 1/2 teaspoon sesame oil
  • 3 cloves garlic , minced
  • 1 tablespoon ginger , minced
  • 1/4 cup peanuts , chopped
  • 1/4 cup cilantro , chopped

Instructions

  1. Preheat oven to 400 degrees and spray a 9x13 baking pan with vegetable oil spray.
  2. In the bowl of your stand mixer add the milk to the slices of bread.
  3. Melt the butter in a pan and add the minced yellow onions.
  4. Cook on medium low until translucent but not browned.
  5. Remove from heat and let cool.
  6. In your bowl with the milk-soaked bread add the rest of the meatball ingredients, including the cooked onions.
  7. Mix it on low until the bread is broken apart and the meat is combined with the ingredients (using the stand mixer and not your hands helps keep the mixture cold and tender).
  8. Using a meatballer/ice cream scoop or your hands scoop them into balls about the size of a ping pong ball.
  9. Cook, uncovered, for 20-22 minutes.
  10. While the meatballs are cooking, in a large pot, add the coconut milk, peanut butter, soy sauce, honey, rice wine vinegar, lime juice, sesame oil, garlic, and ginger.
  11. Stir well then turn on heat to medium-high.
  12. Cook for 4-5 minutes until sauce has thickened.
  13. Remove meatballs from baking sheet and add to sauce.
  14. Cook for 1 minute until well coated.
  15. Garnish with crushed peanuts and cilantro.
