Ingredients

  • 1 tbsp oil
  • 3 tbsp peanut butter
  • 1 tbsp light soy sauce
  • 2 cloves garlic minced
  • 1/3 cup water
  • 2 tbsp chili sauce
  • 1 tbsp palm sugar
  • 3.50 oz (about 1 cup) dry rice noodles
Garnishing options
  • 1 stalk green onion chopped, optional
  • 1 tbsp Coriander chopped, optional
  • 2 tbsp crushed peanuts optional
  • 1 tsp sesame seeds optional

Instructions

  1. Heat oil in a saucepan over low heat. Add garlic, peanut butter, soy sauce, chili sauce, palm sugar, and water. Stir continuously until everything is well combined, and the palm sugar completely dissolves.
  2. Cook and drain the noodles according to the package instructions. When draining, leave them a little bit moist to help the sauce stick better.
  3. Toss your Thai noodles with peanut sauce until they’re evenly coated. Serve immediately, garnished with green onions, coriander, sesame seeds, crushed peanuts, and a squeeze of lime if you like. Enjoy!
