Thai Peanut Pork Tenderloin

Ingredients

  • 1 pound pork tenderloin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 2 limes , thinly sliced
  • 3 tablespoons coconut oil , vegetable oil okay (melted)
  • 1 cup coconut milk
  • 1/3 cup creamy peanut butter
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoons rice wine vinegar
  • 1 tablespoon ginger , peeled and minced
  • 3 garlic cloves , minced
  • 1/4 cup peanuts , crushed
  • 2 tablespoons fresh cilantro , minced

Instructions

  1. Season pork with salt and pepper.
  2. Brush coconut oil over the pork tenderloin.
  3. Place pork into a 9x13 baking dish and let pork rest for 20 minutes before cooking.
  4. Preheat oven to 400 degrees.
  5. Cook the pork for 10 minutes (temperature should be 145 degrees).
  6. While pork is cooking halfway, make the Thai peanut sauce.
  7. To a medium saucepan add coconut milk, peanut butter, soy sauce, honey, rice wine vinegar, ginger, and garlic.
  8. Bring to a simmer and cook for 3 minutes to thicken.
  9. Spoon sauce over pork tenderloin and continue to bake, uncovered for 10 minutes.
  10. Garnish with crushed peanuts and cilantro.
