Thai Pork Meatballs

Ingredients

  • 1.5 lbs ground pork
  • 1 large egg
  • 1 tablespoon fish sauce
  • 1 teaspoon light soy sauce
  • ¼ teaspoon sea salt
  • 1 teaspoon granulated sugar
  • 3 cloves garlic minced
  • 1 tablespoon minced ginger
  • 2 green onions chopped
  • ½ C cilantro chopped, optional
  • ¼ C panko breadcrumbs
For serving:
  • Thai sweet chili sauce

Instructions

  1. Preheat oven to 425°F/218°C.
  2. In a bowl, combine the ground pork, egg, fish sauce, soy sauce, salt, sugar, garlic, ginger, green onions, cilantro (if using) and panko breadcrumbs.
  3. Give everything a good mix.
  4. Take a portion of the meat mixture and form it into a round meatball.
  5. Place the meatball onto a large baking sheet lined with parchment paper.
  6. Repeat with the remainder of the pork mixture.
  7. Bake the meatballs at 425°F/218°C for 20-25 minutes, or until the internal temperature reaches a minimum of 160°F/71°C.
  8. Remove the pork meatballs from the oven.
  9. Add a squeeze of fresh lime juice (optional) and serve with steamed rice as is or with Thai sweet chili sauce (either drizzled over the meatballs, or as a dipping sauce).
