Ingredients

  • 8 cups spring greens mixed
  • 1 2/3 cups apple such as Pink Lady or Honeycrisp, sliced
  • 1/2 cup pomegranate seeds
  • 2/3 cup blue cheese crumbled
  • 2/3 cup candied pecans coarsely chopped
  • 6 tablespoons olive oil
  • 1 to 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 4 teaspoons shallot minced
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large bowl, combine mixed greens, sliced apples, pomegranate seeds, blue cheese, and candied pecans.
  2. In a small bowl, whisk together olive oil, honey, apple cider vinegar, Dijon mustard, minced shallot, salt, and pepper until the dressing is well-emulsified. Adjust sweetness as needed with honey.
  3. Drizzle the dressing over the salad mixture to taste. Gently toss to coat if preferred. Serve immediately.
