Ingredients

Honey Simple Syrup Ingredients
  • 1/2 cup honey
  • 1/2 cup water
The Bee's Knees Cocktail Ingredients
  • 1 ounce honey simple syrup – method below (2 tbsp)
  • 3/4 ounce gin ( 1 1/2 tbsp)
  • 1/2 ounce freshly squeezed lemon juice (1 tbsp)
  • 1/2 ounce freshly squeezed orange juice (1 tbsp)

Instructions

To Make Honey Simple Syrup
    Cup of Yum
  1. Combine water and honey in a small saucepan. Heat over medium, whisking often, till the mixture reaches a slow simmer and the honey is liquid and smooth. Remove from heat and cool to room temperature.
To Make Cocktail
  1. Combine 2 tbsp of the honey simple syrup (use less for a less sweet drink), gin, lemon juice and orange juice in a cocktail shaker filled with ice and shake vigorously. Strain into a small chilled cocktail glass and serve.
  2. Reserve remaining honey simple syrup for more cocktails. If left to stand longer than a few hours, the syrup will need to be re-simmered and recombined, then cooled again.
