The Best Avocado BLT (with Crab Salad)

Warm toasty bread, cool creamy avocado and crab, fresh baby spinach, juicy tomatoes, thick crispy bacon

Ingredients

  • 4 lices bread we used gluten free bread, but you may use your favorite type
  • 1/2 cup crab meat shredded (we used real crab, but you may sub imitation crab)
  • 1 avocado mashed
  • 4 trips Bacon cut in half
  • 1 to tomato sliced
  • 1/2 cup mayonnaise
  • 1 Tablespoon lemon juice or lime juice
  • Splash hot sauce
  • Pinch salt & pepper optional

Instructions

  1. Toast bread and prepare bacon according to directions on package.
  2. Combine crab, avocado, mayonnaise, lemon juice and splash hot sauce in a small mixing bowl. Mash gently with a fork until all ingredients are incorporated together and there are no large lumps.
  3. Spread a generous spoonful of crab salad on one piece of bread. Layer fresh baby spinach, sliced tomatoes, and bacon. Spread a thin layer of mayonnaise on another piece of bread to complete the sandwich.
