The Best Bran Muffins

Ingredients

  • 1½ cup wheat bran
  • 1 cup buttermilk
  • ⅓ cup oil vegetable
  • 1 large egg
  • ½ cup light brown sugar
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt

Instructions

  1. Preheat oven to 375℉ and spray a muffin tin with baking spray. Set aside.
  2. In a small bowl add the wheat bran and pour the buttermilk over, stir to combine, let this soak for 10 minutes.
  3. In a large size bowl combine the oil, egg, brown sugar and vanilla. Stir to combine.
  4. In a medium size bowl add the flour, cinnamon, baking soda, baking powder and salt. Stir with a fork or whisk.
  5. Add the soaked wheat bran to the wet ingredients. Stir to combine.
  6. Slowly add the dry ingredients to the wet and mix together.
  7. Scoop the batter into the prepared muffin tin, fill to 2/3 full. This recipe makes 12 muffins.
  8. Bake for 16-18 minutes until a toothpick inserted in the center comes out clean.
