The Best Chicken Salad
This recipe is the best chicken salad you will ever have! Filled with freshly pulled rotisserie chicken, apples, celery, shallots, grapes, and fresh herbs tossed in a herbed lemon mayonnaise dressing. Delicious on its own or piled high on toasted bread!
Ingredients
- 2 pounds chicken shredded, rotisserie
- 1 cup grapes red; quartered
- 1 cup apple Fuji variety, small diced
- 1 cup celery about 2 stalks, small diced
- 1/4 cup shallot minced
- 1 cup mayonnaise
- 3 tablespoons lemon juice
- 2 tablespoons parsley fresh, minced
- 2 tablespoons chives fresh, minced
- 1 tablespoon Dijon mustard
- kosher salt to taste
- black pepper to taste
Instructions
- Add chicken, grapes, apples, celery, and shallots to a large mixing bowl.
- In a small mixing bowl add mayonnaise, lemon juice, parsley, chives, and Dijon mustard.
- Whisk to combine.
- Pour mayonnaise mixture over chicken mixture and stir to combine.
- Taste and season with kosher salt and black pepper.
- Store in the refrigerator and serve plain, on bread, in a wrap, or on lettuce wraps.
