The Best Chicken Salad

This recipe is the best chicken salad you will ever have! Filled with freshly pulled rotisserie chicken, apples, celery, shallots, grapes, and fresh herbs tossed in a herbed lemon mayonnaise dressing. Delicious on its own or piled high on toasted bread!

Ingredients

  • 2 pounds chicken shredded, rotisserie
  • 1 cup grapes red; quartered
  • 1 cup apple Fuji variety, small diced
  • 1 cup celery about 2 stalks, small diced
  • 1/4 cup shallot minced
  • 1 cup mayonnaise
  • 3 tablespoons lemon juice
  • 2 tablespoons parsley fresh, minced
  • 2 tablespoons chives fresh, minced
  • 1 tablespoon Dijon mustard
  • kosher salt to taste
  • black pepper to taste

Instructions

  1. Add chicken, grapes, apples, celery, and shallots to a large mixing bowl.
  2. In a small mixing bowl add mayonnaise, lemon juice, parsley, chives, and Dijon mustard.
  3. Whisk to combine.
  4. Pour mayonnaise mixture over chicken mixture and stir to combine.
  5. Taste and season with kosher salt and black pepper.
  6. Store in the refrigerator and serve plain, on bread, in a wrap, or on lettuce wraps.
