The Best Cucumber Salad

Summertime is not complete without the best cucumber salad! It takes thinly sliced cucumbers and red onions mixed together with a sweet vinegar dressing. You'll love this easy and quick side dish!

Ingredients

  • 1 pound mini cucumbers thinly sliced
  • 1 small red onion thinly sliced
  • 3 tablespoons seasoned rice wine vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon dried dill
  • 1 teaspoon kosher salt
  • 1/2 teaspoon crushed red pepper

Instructions

  1. Add all ingredients to a large bowl and toss to combine.
  2. Cover, and place in the refrigerator and let sit for at least 2 hours to help the flavors develop.
  3. Serve cold.

Notes

  • Mini cucumbers are also called Persian cucumbers
  • You can use apple cider vinegar in place of rice vinegar
  • Sweet onion can be a delicious replacement for red onion
  • You can use brown sugar in place of granulated sugar but it will add a slight molasses flavor
