Summertime is not complete without the best cucumber salad! It takes thinly sliced cucumbers and red onions mixed together with a sweet vinegar dressing. You'll love this easy and quick side dish!

Ingredients
- 1 pound mini cucumbers thinly sliced
- 1 small red onion thinly sliced
- 3 tablespoons seasoned rice wine vinegar
- 1 tablespoon granulated sugar
- 1 teaspoon dried dill
- 1 teaspoon kosher salt
- 1/2 teaspoon crushed red pepper
Instructions
- Add all ingredients to a large bowl and toss to combine.
- Cover, and place in the refrigerator and let sit for at least 2 hours to help the flavors develop.
- Serve cold.

Notes
- Mini cucumbers are also called Persian cucumbers
- You can use apple cider vinegar in place of rice vinegar
- Sweet onion can be a delicious replacement for red onion
- You can use brown sugar in place of granulated sugar but it will add a slight molasses flavor
