Ingredients

  • 4 chicken breasts rib meat and extra fat removed
  • ¼ cup olive oil
  • 6-8 cloves garlic with or without peel
  • 1 tablespoon garlic powder
  • 1 lemon sliced into rounds
  • 2 tablespoons lemon juice
  • 1 tablespoon Italian Herbs
  • 1 teaspoon celtic sea salt
  • 1 teaspoon pepper

Instructions

  1. Add ingredients to a bowl or plastic bag, covering chicken in marinade.
  2. Let sit at least 30 minutes, up to overnight (skip marinating if using frozen chicken breasts.)
  3. Preheat oven to 400 degrees Fahrenheit. (Also can bake at 350, for 5-8 minutes longer)
  4. Add chicken and part of marinade to baking dish that has been lightly greased with a nonstick cooking spray, or lined with foil.
  5. Bake, flipping occasionally, until chicken reaches 160 degrees at the thickest part when using a digital meat thermometer.
  6. Remove chicken from oven and lest rest 10 minutes before cutting.
  7. Discard marinade/cooking liquid.
  8. Serve and enjoy!
