Ingredients

for the homemade marshmallow fluff
  • 2 egg whites
  • ¼ tsp cream of tarter
  • ¾ cup granulated sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • 1 tsp vanilla extract optional
for the fluffernutter sandwiches
  • 8 lices whole wheat bread slices
  • peanut butter
  • marshmallow fluff
  • food cutters optional
  • Sprinkles optional
  • fresh berries for complete lunchbox optional

Instructions

  1. In a mixing bowl, place egg whites and cream of tarter; turn on your mixer to medium and whip the egg whites to soft peaks, about 3-4 minutes.
  2. In a medium saucepan, combine sugar, corn syrup, and water and cook over medium heat. Once the sugar is dissolved, remove from heat.
  3. Slowly pour the hot syrup into the mixing bowl with egg whites while beating on high until the mixture becomes thick and fluffy, about 6-8 minutes. Add-in the vanilla extract if using.
  4. Onto a slice of bread, use a food-cutter to cut-out desired shape if using. Generously spread peanut butter and then a layer of marshmallow fluff.
  5. Spread peanut butter and marshmallow fluff onto another slice of bread and then seal the two slices together so that the shape cut-out is on top. Place sprinkles inside the shape.
  6. Place sandwich into lunchbox and serve with fresh berries, optional.
