Ingredients
for the homemade marshmallow fluff
- 2 egg whites
- ¼ tsp cream of tarter
- ¾ cup granulated sugar
- ½ cup light corn syrup
- ¼ cup water
- 1 tsp vanilla extract optional

- 8 lices whole wheat bread slices
- peanut butter
- marshmallow fluff
- food cutters optional
- Sprinkles optional
- fresh berries for complete lunchbox optional
Instructions
- In a mixing bowl, place egg whites and cream of tarter; turn on your mixer to medium and whip the egg whites to soft peaks, about 3-4 minutes.
- In a medium saucepan, combine sugar, corn syrup, and water and cook over medium heat. Once the sugar is dissolved, remove from heat.
- Slowly pour the hot syrup into the mixing bowl with egg whites while beating on high until the mixture becomes thick and fluffy, about 6-8 minutes. Add-in the vanilla extract if using.
- Onto a slice of bread, use a food-cutter to cut-out desired shape if using. Generously spread peanut butter and then a layer of marshmallow fluff.
- Spread peanut butter and marshmallow fluff onto another slice of bread and then seal the two slices together so that the shape cut-out is on top. Place sprinkles inside the shape.
- Place sandwich into lunchbox and serve with fresh berries, optional.
