Ingredients
- 2 tablespoons oil
- ½ onion chopped
- 3 cloves garlic minced
- 1 red bell pepper chopped
- ½ cup sliced baby carrots
- 3 cups cooked jasmine rice
- ½ cup frozen green peas
- salt and pepper to taste
- 3 tablespoons soy sauce
- 5 tablespoons thai green curry paste
- Handful of cilantro and Thai basil chopped
- 1 lime juiced
Instructions
- Heat a large wok or skillet with oil over medium heat.
- Add the onion and garlic. Stir and cook until the onion starts to become translucent. About 3-5 minutes.
- Add the red pepper and carrots and cook for an additional 2-3 minutes or until the bell pepper starts to soften.
- Add the cooked jasmine rice, soy sauce, and Thai green curry paste. Stir until fully mixed with the vegetables. Cook for about 5 minutes until the rice is infused with all the flavors.
- Once the rice and vegetables are done cooking, remove from heat. Top with Thai basil, fresh cilantro, and fresh lime juice.
