The Best Shrimp Fried Rice Recipe (Easy!)

This easy-to-make shrimp fried rice dish is packed with flavorful shrimp, fluffy rice, and a medley of colorful vegetables, all stir-fried to perfection. This 15 minute dish is a staple in our home and guaranteed to hit the spot in both ease and satisfaction!

Ingredients

  • 3 tbsp sesame oil
  • 1 red bell pepper diced
  • 1 cup frozen or canned peas and carrots
  • 1 cup frozen or canned corn
  • 1½ tsp garlic powder
  • 1 tsp ground ginger
  • salt and pepper to taste
  • 4 eggs lightly beaten
  • 1 lb frozen cooked shrimp thawed
  • 2 (8.8 oz) pouch cooked rice I use Ready Rice (White Rice, Brown Rice, or Fried Rice)
  • 4 tbsp low-sodium soy sauce
  • 2 green onions diced, for garnish - optional

Instructions

  1. Into a large non-stick skillet or wok, add sesame oil, diced red pepper, and cook over medium-high heat for 1-2 minutes, adding in the peas, carrots, and corn; cook for about 2-3 minutes, or until vegetables begin to soften, stirring frequently.
  2. Add in the garlic, ginger, salt, pepper, and cook until fragrant.
  3. Push the vegetables to one side of the skillet, adding in the eggs to the other side; cook until eggs are scrambled.
  4. Add the shrimp and rice to the pan. Evenly distribute the soy sauce over the pan and stir to combine.
  5. Cook 3-5 minutes, until shrimp is heated through. Garnish with green onion if desired.
