Ingredients

  • ½ lb uncooked bacon chopped
  • 1 small yellow onion diced
  • 2 28oz. cans Bush’s vegetarian baked beans
  • ? cup molasses
  • ½ cup light brown sugar
  • ¼ cup Coke
  • ¼ cup Dijon mustard
  • 3 bay leaves
  • 1 teaspoon apple cider vinegar
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large skillet, cook the chopped bacon and yellow onion until the bacon is almost cooked. Remove from heat and add the bacon, onions, and drippings to a crockpot.
  2. Then add the beans, molasses, brown sugar, coke, mustard, bay leaves, and vinegar.
  3. Cook on low heat for 5 to 6 hours or high heat for 3.5 to 4 hours.
  4. Remove bay leaves before serving.

Notes

  • Store in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop or in the microwave.
  • You can also prepare the whole batch in advance of a party or potluck and reheat in the crockpot.
  • Slab bacon or salt pork may also be used in this recipe.
  • Coke can be omitted from this recipe or replaced with dr pepper or root beer.
  • These beans are on the sweeter side, feel free to add in a jalapeno pepper or two to add some heat or reduce the light brown sugar to ? cup.
