The Best Spanish Rice

Perfectly cooked rice in tomatoes and stock is the perfect side for any dinner.

Ingredients

  • 2 tablespoons oil
  • 2 tablespoons chopped onion
  • 1 ½ cups uncooked white rice
  • 2 cups chicken broth
  • 14.5 oz diced tomatoes with green chilies drained
  • green onions to garnish

Instructions

    Cup of Yum
  1. Heat oil in a large, heavy skillet over medium heat.
  2. Stir in onion, and cook until tender and slightly browned, about 5 minutes.
  3. Mix rice into skillet, stirring often.
  4. When rice begins to brown, stir in chicken broth and diced tomatoes.
  5. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.
  6. Fluff, top with green onions, and serve!
