Ingredients

Scallion Cream Cheese
  • 2 oz. cream cheese
  • 1 green onion, sliced
  • 1/2 tsp lemon juice
  • 1/8 tsp garlic powder
  • 1/8 tsp dried dill
  • 1 pinch salt
Sandwich
  • 2 lices hearty bread
  • 6 lices cucumber
  • 2 lices tomato
  • 1 handful spinach
  • 1 carrot, shredded
  • 1/2 red bell pepper
  • 1 handful alfalfa sprouts
  • 1 pinch salt
  • 1 pinch pepper

Instructions

    Cup of Yum
  1. Whip the ingredients for the scallion cream cheese together in a small bowl (I used a fork).
  2. Lightly toast the bread. Spread the cream cheese over one side of each pieces of bread.
  3. Pile the vegetables onto the bread, then close. Slice in half and enjoy.
