Ingredients

  • 1/2 cup of Long grain Rice
  • 1 1/2 cups of milk
  • 1 cup of water
  • 1/2 tablespoon of butter
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of salt
Last Ingredients
  • 1/2-1 cup milk
  • 1/3 cup of sugar
  • 1/3 cup of raisins

Instructions

    Cup of Yum
  1. Preheat your oven to 300 degrees F.
  2. Butter a 1 1/2  quart casserole dish.
  3. Stir the first 6 ingredients (except for the sugar and raisins) together in the buttered dish.
  4. Cover with a lid and bake for 1 hour without disturbing the rice at all.
  5. Reduce the oven temperature to 250 degrees F and continue baking for another hour.
  6. Stir the 1/3 cup of sugar into the milk in a microwave safe container. Microwave in 30 second intervals until the sugar is dissolved into the milk and it's very warm.. If your pudding is dryer than you like at this point, you may use more milk to make the sweet milk. This all depends on your oven and lidded casserole dish and how much moisture was used up already.
  7. Stir the sweet milk into the cooked rice mixture. Add raisins. Bake uncovered in the oven for another 30-45 minutes, until the raisins are plumped and the pudding is your desired texture.
  8. If wanted, sprinkle more cinnamon and nutmeg on top of the pudding right before it finishes.

Notes

  • The spices always seem to float to the top of the pudding, simply stir them in at the end!
