The Knickerbocker

Fall in love with the Knickerbocker – a vintage rum-based cocktail that's definitely due a revival. Pretty and refreshing in equal measure.

Ingredients

  • 50 ml dark rum scant 2 fl oz, 2 measures
  • Duppy Share or Mount Gay are good options
  • 1 tbsp lemon juice
  • 2 tsp Cointreau or Triple Sec
  • 1/2 tsp sugar syrup
  • 2 raspberry frozen ones are fine
  • raspberry extra, for garnish
  • lemon peel for garnish

Instructions

    Cup of Yum
  1. Put the rum, lemon juice, Cointreau, sugar syrup, raspberries and plenty of ice in your cocktail shaker.
  2. Shake really hard – the raspberries will be muddled as a result – and double strain into a tall glass filled with ice (I used a rocks glass instead).
  3. Garnish with extra raspberries or some twisted lemon peel and sip through a straw.
