- 1 pound ground chicken, ground turkey, ground beef, ground pork, or, ground sausage
- 1 pound pork chops,loin or center cut, bone in or boneless, 1 inch thick, cut into 1 inch cubes - (2 chops)
- 1 pound beef steak or roast, cut into 1 inch cubes - (2 steaks)
- 2 cans (15 oz) red kidney beans, drained
- 1 can (15 oz) chick peas, drained
- 1 can (15 oz) black beans, drained
- 1 cup corn, canned or frozen -
- ¾ cup onion, chopped
- ¾ cup pepper, green, red, yellow or orange, chopped
- 2 cans (28 oz) canned tomatoes, diced
- 1 jar (26 oz) tomato sauce -
- 1 cup ketchup or chili sauce -
- 1 can (5 ½-6 oz) tomato paste -
- 2 cups beef broth -
- 1 tblsp sugar, brown or white
- 2 - 3 tblsp chili powder - more or less to taste
- 1 tblsp cumin ground -
- 2 tblsp garlic cloves minced -
- 1 tblsp oregano dried (ground or leaves) -
- 1 tblsp basil dried (ground or leaves) -
- 1 tblsp pepper or cayenne - more or less to taste
- 1 tblsp salt -
- 1 can chopped green chilies - 4-oz
- cooking spray
- Optional Garnishes
- jalapeños seeds and membranes removed, minced - if desired, to taste
- sour cream - if desired to taste
- green onions thinly sliced - if desired, to taste
- cheese grated or shredded - if desired, to taste
Instructions
- There are two ways to make this chili.
- In a large skillet, cook your ground meat until no longer pink and drain. Dump into slow cooker. In the same skillet sauté the pork chops and beef until no longer pink. Also dump into slow cooker. Add all of the ingredients, stir and cook on low for at least four hours.
- The night before I want to eat the chili I coat the inside of the slow cooker with cooking spray. In a large bowl I add all of the ingredients together, except the raw meat and beans, and stir to combine. Set aside. Crumble the raw ground meat across the bottom of the slow cooker. Next spread out the raw sliced pork and beef on top of the ground meat crumble. Pour tomato mixture over raw meat and do not stir the contents of the slow cooker. Let it all cook on low overnight. Wake up, stir the chili, add the beans and let it cook on low all day. Garnish with chopped onions, jalapenos, cheese, and/or sour cream. Serve and enjoy!
