Thermomix Potato And Leek Soup

Delicious and creamy Thermomix potato and leek soup. Easy to prep and loaded with potatoes, leeks, onion, and garlic. Paired with fresh bread rolls and served with crispy potato cubes it makes a fantastic midweek soup dinner.

Ingredients

  • 1 white onion medium
  • 3 garlic cloves
  • 1 Tbsp butter
  • 1 leek large
  • 800 g potatoes peeled weight, white
  • 750 ml vegetable stock
  • 2 Tsp parsley
  • 2 Tsp thyme
  • salt
  • black pepper
  • 2 Tbsp cream cheese Philadelphia brand
  • 1 Tbsp allioli

Instructions

  1. Peel and slice your onion. Peel your garlic cloves. Load into the Thermomix.
  2. Chop and clean your leeks and load into the Thermomix with the butter. Mix on speed 6 for 5 seconds.
  3. Scrape down the edges and then cook for 5 minutes at 100c/210f at speed 1.
  4. Scrape the edges add potatoes until you are just below the max line and cook for another 5 minutes at the same speed and temperature.
  5. Add stock and seasoning and cook for a further 20 minutes at speed 2 at 100c/210f.
  6. Add cream cheese, garlic mayonnaise and if needed extra seasoning and mix for 1 minute at speed 4 to transform into a creamy leek and potato soup before serving.

Notes

  • Creamy. The secret to our super creamy soup without cream is Allioli which is a Spanish garlic mayonnaise and Philadelphia cream cheese. Plus, potatoes make a soup extra creamy.
  • Stock. I make ahead a big batch of instant pot veggie stock and make them into giant ice cubes. Then I can use them in soup recipes, stews etc and they reheat perfectly in the Thermomix. And the stock quantity should be just enough to cover the potatoes.
  • Potatoes. I don’t have a weight in mind when I make a potato soup and just usually add to the max line. I weighed them as I added them, and it came in at 800g.
  • Splatter. Add the splatter guard when cooking this soup as it splashes a lot and is very hot.
  • Leeks. Make sure you clean the leeks before placing in the Thermomix. Leeks carry a lot of grit and can really ruin the soup if not cleaned.
  • Serving. I also saved a few potatoes and air fried them in a similar way to our air fryer sweet potato cubes. They are delicious for serving over your potato soup with some bread rolls.
