Thermomix Vegetable Soup
Delicious creamy Thermomix Vegetable Soup without the cream or high calories. Loaded with broccoli, carrots, cauliflower, onion, and garlic, you will love the flavours of this quick prep Thermomix soup.
Ingredients
- 1 white onion medium
- 5 garlic cloves
- 750 g mixed vegetables
- 2 Tsp extra virgin olive oil
- 1 L vegetable stock
- 2 Tsp oregano
- 2 Tsp parsley
- salt
- black pepper
- 2 Tbsp Greek yoghurt
- 100 g Red Leicester cheese optional, sliced

Instructions
- Peel and slice your onion. Load into the Thermomix with your garlic cloves and extra virgin olive oil. Place it on speed 6 for 5 seconds to mix well and to cut up the onion and garlic more finely. Then scrape down the edges.
- Add the mixed vegetables and place on speed 1.5 for 5 minutes at 100c/210f.
- Then add veggie stock and seasoning and cook for 20 minutes at 100c/210f at speed 2.
- Scrape the edges again add sliced cheese, Greek yoghurt and extra salt, pepper, and parsley. Mix on speed 5 for 2 minutes before serving.
Notes
- Creamy. If you would like your mixed vegetable soup to be creamier, then opt for 750ml of stock rather than 1000ml.
- Stock. I make ahead a big batch of instant pot veggie stock and make them into giant ice cubes. Then I can use them in soup recipes, stews etc and they reheat perfectly in the Thermomix.
