Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups whipping cream (or half and half)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded Mozzarella cheese
  • 1/2 cup gruyere cheese
  • 6 small zucchini sliced about 1/4 inch thick
  • Snipped fresh chives for garnish

  1. Preheat oven to 400 degrees. Lightly spray a 2-quart casserole dish with cooking spray and set aside.
  2. In a small saucepan, melt 2 tablespoons unsalted butter over medium heat, and whisk in 2 tablespoons all-purpose flour, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Add 2 cups whipping cream and stir for about 2 minutes until it thickens. Add half of the 1/2 cup grated Parmesan cheese.
  3. Arrange half of the sliced 6 small zucchini in the prepared casserole dish overlapping each other. Spread half of the sauce on top, followed by half of the 1 cup shredded mozzarella cheese and 1/2 cup Gruyere cheese . Repeat with another layer of zucchini and sauce.
  4. Top with the remaining mozzarella cheese and parmesan cheese.
  5. Bake for 25 minutes or until the zucchini is fork tender and the top starts to brown. Sprinkle with snipped fresh chives for garnish before serving.
