Ingredients
- 3 unripe plantains , peeled and cut into chunks
- 1 white onion , grated
- 5 eggs , beaten
- 8 oz. grated cheese , mozzarella type
- 2 tablespoons butter
- vegetable oil
- salt
- pepper
- chopped fresh cilantro
Instructions
- Plunge the plantain banana pieces into a pot of boiling salted water until tender.
- Drain and crush them coarsely.
- In a skillet, melt the butter over medium heat, brown the onion for a few seconds.
- Add the eggs and stir, then add the cheese and stir until it begins to melt, depending on the cheese used.
- Garnish with cilantro and serve hot.

- For a creamier texture, add ½ cup of milk to beaten eggs.
