Tigrillo

Tigrillo is a typical and very famous Ecuadorian dish made with plantains that are mixed with eggs and cheese.

Ingredients

  • 3 unripe plantains , peeled and cut into chunks
  • 1 white onion , grated
  • 5 eggs , beaten
  • 8 oz. grated cheese , mozzarella type
  • 2 tablespoons butter
  • vegetable oil
  • salt
  • pepper
  • chopped fresh cilantro

Instructions

  1. Plunge the plantain banana pieces into a pot of boiling salted water until tender.
  2. Drain and crush them coarsely.
  3. In a skillet, melt the butter over medium heat, brown the onion for a few seconds.
  4. Add the eggs and stir, then add the cheese and stir until it begins to melt, depending on the cheese used.
  5. Garnish with cilantro and serve hot.

Notes

  • For a creamier texture, add ½ cup of milk to beaten eggs.
