Ingredients

  • 4 large croissants pre-baked, or baked and cooled
Half Batch Chocolate Chip Cookie Dough
  • 1 tick salted butter room temperature, ½ cup
  • ¼ cup granulated sugar ⅓ cup for high altitude
  • ½ cup light brown sugar packed (⅓ cup for high altitude)
  • 1 large egg room temperature
  • ½ tsp vanilla extract
  • 1 cup unbleached all-purpose flour 1 ¼ cups for high altitude
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt ¾ tsp if using unsalted butter
  • powdered sugar for sifting
  • 1 cup semi-sweet chocolate chips
Or instead of making your own cookie dough
  • 1 package storebought chocolate chip cookie dough I tested using storebought Organic chocolate chip cookie dough

Instructions

    Cup of Yum
  1. Preheat the oven to 375° F (190° C). Line a baking sheet with parchment paper.
If making cookie dough (make it now)
  1. Cream (mix) butter and sugars together for 3-4 minutes until light and fluffy. Add egg and mix for 1 minute. Add vanilla extract and mix to combine. In small bowl combine flour, baking soda and salt together, then slowly add to butter and sugar mixture until just combined. Stir in chocolate chips and refrigerate dough for 10 minutes.
  2. Using a serrated knife, slice pre-baked croissants (4) in half horizontally, splitting as if to make a sandwich.
  3. Smash two cookie dough balls in your hand (about 2 TBL each), then spread onto croissant with your fingers.
  4. Place top of croissant on top and divide one dough ball in half, placing on top of croissant. About a medium cookie scoop worth.
  5. Place on the baking sheet. Repeat this with the rest of the croissants and cookie dough.
  6. Bake in the oven for 9-15 minutes until the tops of the croissants and cookies are browned and the center cookie dough is still gooey. For gooier crookies bake less time, for more firm cookies bake longer.
  7. When the croissants are done, let them cool for about 5 minutes, then sprinkle with some powdered sugar to finish.

Notes

  • Your bake time on this dessert can vary based on if you want the cookie dough inside the cookie to be more baked or more gooey.
  • While the croissant gets a twice bake, it won’t burn, it will just get a little browner and more crisp.
  • And the inside of the cookie croissant is half-baked but if you desire a firmer cookie inside, versus a molten cookie, spread the cookie dough out thinner on the croissant and bake on the longer side.
  • Due to their half-baked nature - leftover cookie croissants can be stored in an airtight container in the fridge for up to five days. If you have baked the inner cookies completely, they may be stored at room temperature for 2 days.
  • Oven Reheat | Reheat the croissant cookies in a preheated oven at 350°F (175° C) for five minutes, or until the cookie dough becomes soft again. Loosely cover with aluminum foil to prevent the tops from becoming too brown or overbaked.
  • Air Fryer: You can also reheat the crookies in the air fryer at 320°F for a few minutes or in the microwave for 15 to 30 seconds.
  • Just assemble the croissant cookies and store the unbaked cookie croissants in an airtight container in the fridge for up to two days, or freezer up to 2 months.
  • Then, set the crookies on the counter as the oven preheats to 375° F (190° C). Bake for 10 to 16 minutes on a prepared baking sheet and enjoy!

  • Try other cookie doughs; I’m thinking peanut butter, sugar cookie, brownie cookies, snickerdoodle would be amazing!
  • Go the lazy route and use storebought organic chocolate chip cookie dough.
  • Add nuts! Walnuts, pecans, sliced almonds and macadamia nuts would all be amazing in these cookies!
  • Use mini croissants to make more individual-sized cookie croissants.
