Ingredients

  • 1/2 pound white fish such as sea bass or fluke, sashimi-grade
  • 1/4 cup lime juice fresh
  • 1/4 cup lemon juice fresh
  • 2 tablespoons aji amarillo paste minced, or fresh aji amarillo
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ginger grated, fresh
  • 1/2 teaspoon garlic grated, fresh
  • cilantro for garnish, fresh leaves

  1. Chill the fish in the freezer for about 15 minutes to firm it up for easier slicing.
  2. Thinly slice the chilled fish against the grain and arrange the slices on a serving plate in a single layer.
  3. In a small bowl, whisk together lime juice, lemon juice, aji amarillo, salt, ginger, and garlic until well combined.
  4. Drizzle the citrus-chili sauce evenly over the fish slices, ensuring each piece is coated.
  5. Garnish the tiradito with fresh cilantro leaves and serve immediately.
