Ingredients

  • 16 ounces cream cheese
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs
  • 2 tablespoons brandy
  • 12 ladyfingers split
  • 1/2 cup brewed strong black coffee
  • 1 cup Cool Whip

Instructions

  1. Preheat the oven to 350°F.
  2. Place the cream cheese, sugar, and vanilla in a mixing bowl and beat with an electric mixer at medium speed until well blended.
  3. Add the eggs one at a time and continue beating until well blended.
  4. Add the brandy and stir or mix on low speed to combine.
  5. Arrange ladyfingers on the bottom and sides of a 9-inch pie plate.
  6. Drizzle the coffee evenly over the ladyfingers.
  7. Spread the cream cheese mixture over the ladyfingers,.
  8. Bake for approximately 1 hour.
  9. Cool the cheesecake to room temperature. Then refrigerate for at least 3 hours or overnight.
  10. Garnish with Cool Whip before serving.
