Ingredients

  • 12 lime leaves or lemon tree, rinsed (see tips above the recipe)
  • 6 mint leaves
  • 1 star anise (optional)
  • 1 lime or lemon
  • 4 tablespoons honey (or sugar) to taste

Instructions

1. Boiling

  1. In a deep saucepan (preferably stainless steel) heat 8 cups [2 liters] of water over medium heat until it comes to a gentle boil.Add the lime leaves, and mint leaves, and star anise. Simmer over very low heat until the water has reduced to half or has a light green color.
2. Serving
  1. Remove from the heat and add the juice of the lime. Remove leaves.Sweeten with honey to taste (optional).Serve hot.
