Ingredients

  • 4 large pork sausages
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 large eggs
  • 1 cup whole milk
  • 2 tablespoons vegetable oil
  • Onion gravy for serving optional

Instructions

  1. In a large bowl, whisk together the flour, salt, and pepper. Add the eggs and milk, and whisk until smooth.
  2. Let the batter rest at room temperature for about 30 minutes.
  3. Preheat the oven to 425°F. In an oven-safe dish, add the vegetable oil and sausages. Bake for 10 to 15 minutes to brown slightly.
  4. Remove the dish from the oven, pour the batter around the sausages, and return to the oven.
  5. Bake for 25 to 30 minutes until the batter is puffed and golden. Do not open the oven during the first 20 minutes of baking to ensure proper rise.
  6. Serve warm with onion gravy if using.
