Ingredients

  • 6 ounces rice noodles
  • 14 to 16 ounces tofu drained, firm
  • 1 Mango ripe
  • 1 English cucumber
  • 1 avocado ripe
  • basil handful
  • cilantro handful
  • 6 ounces rice paper spring roll wrapper

Instructions

  1. Cook rice noodles according to package OR place in dish, pour boiling water to cover, and allow to soften for 15 minutes. Drain thoroughly.
  2. In the meantime, cut tofu, mango, cucumber, and avocado into thin slices.
  3. Chop herbs.
  4. Fill a wide, shallow dish with warm water to soak rice wrappers in.
  5. Assemble rolls one at a time. Start by soaking the rice wrapper in warm water until softened (this will only take a few seconds). Place a slice or two of tofu, mango, cucumber, and avocado in the middle of the wrapper, about ⅓ of the way from the bottom. Top with a small handful of rice noodles. Sprinkle with a large pinch of basil and cilantro. Roll the spring roll as you would a burrito.

Notes

  • Prepare all filling ingredients before starting to roll for efficient assembly.
  • Cut ingredients into thin, small pieces to ease rolling and prevent bursting.
  • Do not overfill rolls; moderate filling makes rolling easier and maintains shape.
  • Work with one rice paper wrapper at a time due to delicate nature of the wrapper.
  • Store leftovers in an airtight container covered with a damp paper towel to maintain moisture for up to three days; texture may change over time.
