Ingredients

The Tofu:
  • 6 ounces extra-firm tofu
  • 1 tablespoon soy sauce
  • 1/2 tablespoon apple cider vinegar
  • 1/2 teaspoon taco seasoning
  • 1 tablespoon extra virgin olive oil
The Tacos:
  • 1 cup red cabbage
  • 1 tablespoon lime juice
  • pinch salt
  • 2 tortillas
  • sour cream
  • cilantro fresh

Instructions

    Cup of Yum
  1. Drain the tofu, then pat dry with a clean paper towel. Cut into small pieces or crumble with your hands.
  2. Toss the crumbled tofu with the soy sauce and vinegar, then add the taco seasoning.
  3. Heat the olive oil on medium-high in a large skillet. Add the tofu and cook for 5 minutes, until browned and lightly crispy.
  4. Thinly slice the red cabbage and combine it in a bowl with the lime juice and season with a pinch of salt.
  5. Warm both sides of the tortillas in a pan.
  6. Place the tofu crumbles in the tortillas. Top with the sour cream, cilantro leaves, and red cabbage.
