Tomato and Chickpea Salad

Ingredients

  • 15 oz can chickpeas drained and rinsed
  • 8 oz cherry tomatoes sliced in half
  • 1 shallot finely minced
  • 1 tablespoon freeze dried Italian seasoning or fresh minced basil thyme, sage, oregano, and rosemary.
  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic salt
  • Fresh cracked pepper

Instructions

  1. In a small bowl, combine olive oil, red wine vinegar, Italian seasoning, garlic salt, and pepper. Stir vigorously to mix. 
  2. In a large bowl, combine chickpeas, minced shallot, and sliced cherry tomatoes. 
  3. Drizzle dressing over chickpeas and tomatoes, toss well to coat. 
  4. Serve warm or chill for at least 1 hour. 
  5. Serve.
