Tomato Arugula Baguette Sandwich

This sandwich layers thinly sliced heirloom tomatoes, gruyere cheese, fresh arugula, and pickled onions inside a baguette spread with a basil-garlic butter. Ingredients

  • 1 baguette
  • 2 tomato or your favorite sweet tomato, sliced, heirloom
  • 8-10 lices gruyere cheese about 4.75 oz
  • 1/2 cup onion pickled
  • 1 cup arugula fresh
  • 3 tablespoons butter very soft, salted
  • 1/4 teaspoon garlic powder
  • 1/4 cup basil chopped

  1. Prep Butter: In a small bowl, add very soft butter, basil, and garlic powder. Mix well.
  2. Slice Baguette: Slice your baguette lengthwise. You can choose to either assemble like this, or halve so that you have 4 pieces that are about 9 inches long.
  3. Fill Sandwich: On the top half of the baguette, spread a thick layer of the basil butter spread. On the lower half, add a layer of tomatoes, gruyere cheese slices, arugula, and pickled onions. Top with buttered baguette half.
  4. Slice and Serve: Gently cut the baguette into 4 pieces (will be approximately 4 1/2 inches long) and serve!

Notes

  • Softening butter by placing a hot glass over it produces an ideal texture without melting.
  • For a hard baguette, soften by drenching in cold water, wrapping in foil, and baking at 300°F before unwrapping and finishing baking.
  • Substitute the gruyere with other hard, nutty cheeses like manchego, gouda, or cheddar depending on preference.
  • Consider Vietnamese-style baguettes as an alternative bread choice.
  • Layer tomatoes first on the bottom bread half to soak juices into the bread, which improves flavor and texture.
  • Adjust fill amounts to suit taste preferences or portion sizes.
